1 cup sugar
1 packet Greggs Instant Pudding mix (i used chocolate but apparently butterscotch is good)
3 Tablespoons cornflour
1 ½ cups flour
1 teaspoon baking powder
Beat butter & sugar, then beat in egg, then instant pudding mix. Sift in flour, cornflour & baking powder and mix well. Knead if necessary.
Roll into small balls & press with a fork.
Bake for approx 10 mins at 190°C (375°F)
